Penne Alla Vodka Tomato Cream Sauce (with Chicken)


  • 1 (1 Pound) Box Penne Pasta
  • 1 Tablespoon Salt
  • 1 Tablespoon Olive Oil
  • 1 (24 Ounce) Jar Tomato Puree or Pasta Sauce
  • 2-3 Tablespoons Dried Parsley
  • 2 Teaspoons Salt
  • 1/4 Teaspoon Pepper
  • 4 Tablespoons Cream Cheese
  • 4 Tablespoons Butter
  • 1/2 Cup Vodka
  • 1 Cup Heavy Cream
  • 3/4 Cup Parmesan Cheese (plus extra to plate)
  • 1 Cup Shredded or Chopped Cooked Chicken (you can use leftover chicken or store bought)


  1. Bring a pot of water to a boil.  Add the penne pasta, along with a tablespoon of salt and a tablespoon of olive oil.  Cook to the lower end of the manufacturer's directions.  Drain and set aside. 

  2. In a large casserole pot, heat the tomato puree on medium heat. 

  3. Add the parsley, 2 teaspoons of the salt, and pepper.  

  4. Stir in the cream cheese and continue stirring until the cream cheese melts.  

  5. Add the butter.  Cook until the butter melts. 

  6. Add the vodka.  Cook for 2 to 4 minutes.

  7. Lower the heat to low-medium, and stir in the heavy cream. 

  8. Stir in the parmesan cheese.  

  9. Stir in the cooked chicken. 

  10. At this point, stir in the cooked pasta.  Make sure to cover all of the pasta with the sauce.
