Cheeseburger Macaroni and Cheese

Ingredients

  • 2 Teaspoons Oil
  • 1-1/3 Pounds Ground Beef (I used 20% fat)
  • 6 Ounces Tomato Paste
  • 1 Cup Chopped Tomatoes (I used fresh, organic tomatoes)
  • 2 Teaspoons Granulated Onion/Onion Powder
  • 1 Teaspoon Garlic Powder
  • 1/2 Teaspoon Chilli Pepper Powder
  • 1/2 Teaspoon Cayenne Pepper Powder
  • 1/2 Teaspoon Mustard Powder
  • 1 Teaspoon Salt
  • 1/8 Teaspoon Pepper
  • 1/8 Teaspoon Paprika
  • 2 Tablespoons Ketchup
  • 2 Tablespoons Cream Cheese
  • 4 Tablespoons Butter
  • 2 Cups Heavy Cream
  • 3 Cups Milk
  • 1-1/2 Cups Shredded Cheddar Cheese

Instructions

  1. Heat a casserole pot or another deep dish to medium.  Add the oil.

  2. Add the meat.  Use a wooden spoon to break up the meat.  Cook until the meat is no longer pink.  

  3. Add the tomato paste, followed by the ketchup.  Stir until well incorporated.  

  4. Stir in the chopped tomatoes.  Cook until the tomatoes break down and incorporate into the meat sauce.  

  5. Add all the spices. 

  6. Add the cream cheese.  Stir until well incorporated. 

  7. Stir in the butter.  Cook until the mixture thickens.  

  8. Add the milk and 1-1/2 cups of the cream.  Bring the mixture to a simmer.  

  9. Stir in the pasta.  Continue stirring while the pasta cooks through.  

  10. Lower the heat.  Stir in the cheddar cheese and the remaining 1/2 cup of the cream.
