Oyster Rice

Ingredients

  • 8 Tablespoons Butter
  • 1 Cup Sweet Yellow Onion, diced
  • 2 Cups White Rice (I use Uncle Ben's Original)
  • 5-1/2 Cups Chicken Stock or Broth (use reduced sodium. If not, cut the additional salt)
  • 2 Teaspoons Salt
  • 1/4 Teaspoon Pepper
  • 1 Teaspoon Onion Powder
  • 1/4 Teaspoon Turmeric Powder
  • 2 (8 Ounce) Cans Whole Oysters in Water (drained of water)
  • 1 (3.75 Ounce) Packs Smoked Oysters in Oil (drained of oil)
  • 1/4 Cup Heavy Cream

Instructions

  1. Melt the butter on low-medium heat.

  2. Add the onions.  Cook until the onions begin to soften.

  3. Stir in the rice.  Cook for an additional minute, stirring with a wooden spoon.

  4. Pour the chicken stock over the rice.  Raise the heat to medium and bring the rice to a simmer, stirring occasionally.

  5. Lower the heat to low-medium and add the salt, pepper, onion powder, and turmeric. Cook for about 13 minutes.

  6. Add the oysters and cream. Cook for about 7 more minutes, or until the liquid is absorbed and the rice is fluffy.
