Greek Lemon Garlic Chicken


  • 4 Pounds Chicken Pieces
  • 3/4 Cup Freshly Squeezed Lemon Juice
  • 1/2 Cup Olive Oil
  • 1/2 Cup Chicken Stock
  • 3 Teaspoons Minced Garlic
  • 1 Teaspoon Salt
  • 1/8 Teaspoon Pepper
  • 1 Teaspoon Oregano
  • 1/2 Teaspoon Rosemery
  • 1 Small Lemon (cut in wedges) (optional)


  1. Preheat oven to 375 degrees Fahrenheit.  

  2. In a bowl combine the lemon juice, olive oil, chicken stock, minced garlic, salt, pepper, oregano, and rosemary.  You can replace the oregano and rosemary with an equal amount of herbs de Provence. 

  3. Lay the chicken pieces in a deep pan.  Pour the lemon mixture over the chicken pieces. Decorate with the lemon wedges. 

  4. Bake for about 1 hour and 20 minutes.  Spoon the excess fat off the top of the sauce.
