Soft Peanut Butter Cookies

Old-Fashioned Chewy Peanut Butter Cookies

Ingredients

  • 1 Cup 2 Sticks Unsalted Butter, softened at room temperature
  • 1 ¼ Cups Sugar plus extra sugar for sprinkling on top
  • 1 ¼ Cups Brown Sugar
  • 2 teaspoons vanilla extract
  • 1 ½ Cups Peanut Butter
  • 3 large eggs
  • 2 Cups Flour
  • ¼ Teaspoon Salt

Instructions

  1. Preheat oven to 330 degrees Fahrenheit.
  2. Line the baking sheets with Parchment Paper or a Sill Pad.
  3. Using an electric mixer, cream the butter with the sugars in a large bowl.
  4. Add the vanilla extract.
  5. Stir in the peanut butter.
  6. Add the eggs, one by one.
  7. Stir the baking powder into the flour. Then, gradually add the flour to the peanut butter batter.
  8. For easy handling, refrigerate the batter for 30 minutes.
  9. Roll the dough into 1-1/2 inch balls. Dip each ball into some of the extra sugar.
  10. Space the balls about 2-3 inches apart. I baked 9 cookies per baking sheet.
  11. Using a fork, make the traditional crosshatch design.
  12. Sprinkle some additional sugar on top of each cookie.
  13. Bake for about 17 to 18 minutes.
  14. Note: Allow the cookies to cool completely before removing from the baking sheet.
