Sausage and Egg Breakfast Casserole


  • 1 Pound Premium Pork Sausage (Hot)
  • 1/4 to 1/2 Teaspoon Cayenne Pepper
  • 3 (6 inch) French Sandwich Rolls
  • 1 Cup Shredded Gruyere or Cru Cheese
  • 2 Cups Shredded Cheddar Cheese
  • 13 Large Eggs
  • 1 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 1 Teaspoon Dried Parsley
  • 1/2 Teaspoon Dried Dill
  • 3 Tablespoons Butter, metled and cooled
  • 1-3/4 Cups Heavy Cream


  1. Preheat oven to 350 degrees Fahrenheit. 

  2. Tear the rolls into approximately 1 inch pieces.  Spread them in a 9 by 13 inch baking dish.  

  3. Add the sausage to a pan.  Add the Cayenne Pepper.  On low to medium heat, cook the sausage until it is no longer pink.  Use a wooden spoon to break the sausage apart as you cook it.  Add the sausage to the dinner rolls. 

  4. Spread the Shredded Gruyere (or Cru) Cheese on the sausage.  

  5. Next, spread Shredded Cheddar Cheese on top of the Gruyere Cheese. 

  6. Whisk the eggs in a large bowl.  Add the salt, parsley, dill, and the cream.  

  7. Stir in the melted butter to the egg mixture.  

  8. Evenly pour the egg mixture on the cheddar cheese layer.  

  9. Bake for 35 minutes.
