Denny's Moons Over My Hammy Copycat Breakfast Sandwich

Ingredients

  • 1/2 Tablespoon Cold Butter, plus another tablespoon of butter at room temperature
  • 2 Slices Sourdough Bread (you can substitute for sliced bread of your choice)
  • 1 Slice Swiss Cheese (I used Kraft Big Slice Aged Swiss Cheese)
  • 1 Slice Cheddar Cheese (I used Kraft Big Slice Sharp Cheddar Cheese)
  • 3 Ounce Stack Thinly Cut Ham
  • 2 Large Eggs
  • Salt and Pepper to taste

Instructions

  1. Bring butter to room temperature before beginning.  You want the butter to be spreadable, but not be melted.

  2. Butter each slice of bread on both sides.

  3. Heat a large pan to a low-medium heat.  Add the two slices of bread to the pan.

  4. Cook the bread until it begins to toast up.  This will prevent the inside of the sandwich from getting soggy.  Flip the bread over.

  5. Add the Swiss cheese on one slice of bread and the cheddar cheese on the other slice of bread.

  6. Add the ham to the same pan.  Flip the ham after a few seconds and toss it around until the slices warm up.

  7. Cook until the cheese starts to melt.  If you want to speed up the process, you can cover the pan for a few seconds.

  8. Whisk two eggs in a small bowl.  If you like, add some salt and pepper.

  9. Add a nice sized chunk of cold butter to the eggs.  This is my tip to making super creamy eggs.

  10. Heat a small pan to medium-high heat.  Add the eggs with the cold butter to the pan.  

    Note: Do this step as soon as you add the bread to the other (larger) pan.

  11. Lower the heat to low-medium, and gently push the eggs from the bottom up.  Continue doing this until the eggs are set.  

  12. Pile the ham on top of the slice of bread with the Swiss cheese.  

  13. Add the scrambled eggs on top of the ham.  

  14. Sandwich the other slice of bread on top.

  15. You can serve as is or transfer the sandwich to a cutting board and, using a sharp knife, slice in half.
