Preheat oven to 350 degrees Fahrenheit.
Heat about 4 teaspoons of oil in a large pan on low-medium.
Add the onions and red bell peppers. Cook until the onions and pepper begin to soften.
Add a teaspoon of garlic. Cook for an additional minute or two. You want to cook out that raw, garlic taste.
Stir in the diced tomatoes. Then, stir in the parsley, salt, pepper, paprika, cayenne pepper, and chili pepper.
Cook until the tomatoes cook down and the sauce thickens.
Remove from heat. Make little indentations in the tomato sauce and add an egg in each one. If you like, you can add a little extra salt and pepper.
Crumble a generous portion of Feta Cheese over the dish.
Bake in a preheated oven for about 13 to 14 minutes.
Serve with some Pita Bread or crusty French Bread.
