Fluffy White Rice with Flavor

  • 5 Tablespoons Butter
  • 2/3 Cup Diced Sweet Yellow Onion
  • 2 Cups White Rice Notes: 1) Do not use quick cooking, 2) I use Uncle Ben's Original.
  • 2 Teaspoons Salt
  • 1/4 Teaspoon Pepper (If you can find white pepper, it makes for a nice, clean look)
  • 4-1/2 Cups Chicken Stock or Broth (do not use low fat)


  1. Melt the butter in a pot or casserole dish.  Add the diced yellow onion.  Cook the onion on low-medium heat, until the onions begin to soften.

  2. Add the rice and cook for an additional 1 to 2 minutes, stirring with a wooden spoon.

  3. Pour in the chicken stock. Bring to a boil.

  4. Lower the heat to low-medium and add the salt and pepper.  Cook for 20 to 22 minutes or until done.
