BBQ Chicken Flatbread

Imagine all the flavors of a bbq chicken pizza in an easy to make bbq chicken flatbread.

This flatbread has sweet and tangy bbq sauce, lots of mozzarella and smoked Gouda, red onions, and a generous portion of baked chicken.

Ingredients

  • 2 flatbreads of your choice. Original Naan or Garlic Naan pair well with the bbq sauce
  • 2 tablespoons tomato paste
  • 5 tablespoons bbq sauce of you choice plus a little extra to drizzle on top
  • 3/4 cup low-moisture part-skim mozzarella shredded. Ideally, use the whole milk kind. Do not use low-fat. It does not melt very well
  • 1/4 cup smoked Gouda shredded
  • 1/2 red onion sliced
  • 1/2 cup baked chicken shredded or chopped

Instructions

  1. Lay the flatbreads on a sheet pan with a baking rack.  The baking rack is not mandatory but will prevent the flatbreads from getting soft and soggy.
  2. In a small bowl, combine the bbq sauce and tomato paste.  Spread the sauce over each flatbread.
  3. Combine the mozzarella and Gouda, and spread them over the bbq sauce.
  4. Spread the chicken and onion over the cheese.
  5. Drizzle a little bbq sauce over the pizza.
  6. Bake in a preheated oven at 400 degree Fahrenheit for about 15 minutes.
