Quesadilla with Corn Tortilla

The quesadilla with corn tortilla is not your typical quesadilla.  It has some of the characteristics of a taco.  The corn in the tortilla gives it an extra crunchiness when it cooks in the oil.  The traditional quesadilla is made with flour tortillas.

This is the kind of quick and easy recipe you can make as an appetizer or snack any time.  It takes about 5 minutes.

Ingredients

  • 2 corn tortillas
  • A Mixture of shredded cheeses:
  • 1 tablespoon of shredded queso Chihuahua cheese or queso quesadilla cheese
  • 1 tablespoon shredded cheddar cheese
  • 1 tablespoon shredded Monterey jack cheese
  • 2 teaspoons of a lightly flavored oil such as corn oil, canola oil, or light olive oil.

Instructions

  1. Heat the oil in a pan on medium heat.  Add one of the tortillas.
  2. Top the tortilla with the cheeses.
  3. Top the cheeses with the second tortilla.  Press down with a spatula.  Cook until the cheeses start to melt and the bottom begins to become crisp.
  4. Flip and cook the other side until the desired level of crispiness.
  5. Optional: Slide on a cutting board and slice using a pizza cutter.
