Sautéed Haricot Verts

Also known as French green beans, Haricot Verts is smaller and thinner than the American variety of green beans.  Cooked property, they will be tender, yet still retain some crispness.  This delicious sautéed haricot verts recipe is draped in garlic butter with shallots, and is topped with grated parmesan cheese.

Ingredients

  • 1 8 oz package Haricot Verts (French Green Beans)
  • 2 teaspoons salt to salt water
  • 1 teaspoon light olive oil
  • 2 tablespoons butter
  • 3 tablespoons chopped shallots
  • 1 tablespoon minced garlic
  • 1/4 teaspoon onion powder
  • 1 or 2 teaspoons grated parmesan cheese

Instructions

  1. Bring 3 cups of water to a boil.  Add the green beans to the water, along with the salt.  Wait until the water comes back to a boil and then cook the green bean for 5 to 6 minutes.
  2. In the meantime, heat the butter and oil on low-medium heat in a pan.  Add the shallots.  Cook for 2 minutes.  Then, add the garlic and cook for an additional minutes.  Season with the onion powder.

  3. Add the green beans into the garlic butter and combine. Cook for 2 to 3 more minutes.

  4. Season with the grated parmesan cheese.
