Cotton Candy Ice Cream

This Cotton Candy Ice Cream will take you back to your childhood.

This is a no-churn ice cream recipe.  That means that you can make this ice cream without an ice cream maker.

Ingredients

  • 2-1/2 cups cups heavy cream
  • 1 14 ounce can sweetened condensed milk
  • 2 tablespoons granulated sugar
  • 1/8 teaspoon guar gum
  • 1/2 teaspoon Cotton Candy flavor Can be purchased at Michael's or Amazon
  • About 4 to 6 drops red food coloring depending on how bright and intense you want the coloring to be
  • About 4 to 6 drops blue food coloring again, depending on how bright and intense you want the coloring to be

Instructions

  1. In a small bowl or container, stir together the granulated sugar and 1/8 teaspoon of the guar gum.  A little goes a long way.  Whisk in 1/4 cup of the cream. The mixture will thicken and create something resembling the soft peak stage of meringue. 

  2. In a large bowl, whisk the heavy cream until still peaks form.  You can do this with an electric mixer (recommended) or by using a whisk.  Pro tip: refrigerate the bowl and whisk for one hour prior to using.

  3. Gradually fold the sweetened condensed milk into the heavy cream. 

  4. While whisking, add the guar gum mixture to the heavy cream base.

  5. Next, stir in the cotton candy flavor.  At this point, your ice cream base will taste like cotton candy.
  6. Last, we will give the ice cream base it's cotton candy appearance.  Divide half or a portion of the ice cream into a separate bowl.  Add a few drops of the red food coloring to one bowl, and a few drops of blue to the other bowl.  Start with less, and add more to get the desired color effect.
  7. Transfer the ice cream to a freezer safe container.  You'll want to alternate between the pink and blue to get the look that you want.
  8. Freeze for at least 4 hours.
