Leftover Rice Breakfast

Ingredients

  • 1 Cup Cooked Spanish Rice or Enchilada Rice
  • 1/2 Tablespoon Butter
  • 1 Teaspoon Oil
  • 3 Eggs
  • Salt and Pepper to taste
  • 2 to 3 Tablespoons Queso Fresco

Instructions

  1. Heat the rice in a microwave until steaming hot and a little crispy on top.

  2. Heat a small pan to medium heat.  Add the butter and oil to the pan.

  3. Crack three eggs in a small bowl and add them to the pan.  Add as much salt and pepper as you like.  Cover the pan and cook until the egg whites are completely set.  

  4. Slide the eggs on top of the heated rice.

  5. Top with a generous portion of queso fresco, or cheese of your choice.

Recipe Notes

This recipe is for one breakfast.  Multiply by the number of people serving.
