Shakshuka

Ingredients

  • 4 Teaspoons Olive Oil
  • 1 Cup Chopped Yellow Onion
  • 1/2 Cup Chopped Red Bell Pepper
  • 1 Teaspoon Finely Diced Garlic
  • 4 Cups Fresh Tomatoes or 3 (14 Ounce) Cans Diced Tomatoes (Make sure there is no sugar added)
  • 3 Tablespoon Chopped Parsley, plus a little more to garnish
  • 1 Teaspoon Salt
  • 1/8 Teaspoon Pepper
  • 1/4 Teaspoon Paprika
  • 1/4 Teaspoon Cayenne Pepper
  • 1/4 Teaspoon Chilli Pepper
  • 8 to 10 Eggs
  • 2 to 3 Ounces Feta Cheese

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Heat about 4 teaspoons of oil in a large pan on low-medium.

  3. Add the onions and red bell peppers.  Cook until the onions and pepper begin to soften.

  4. Add a teaspoon of garlic.  Cook for an additional minute or two.  You want to cook out that raw, garlic taste.

  5. Stir in the diced tomatoes.  Then, stir in the parsley, salt, pepper, paprika, cayenne pepper, and chili pepper.

  6. Cook until the tomatoes cook down and the sauce thickens.

  7. Remove from heat.  Make little indentations in the tomato sauce and add an egg in each one.   If you like, you can add a little extra salt and pepper. 

  8. Crumble a generous portion of Feta Cheese over the dish.

  9. Bake in a preheated oven for about 13 to 14 minutes.   

Recipe Notes

Serve with some Pita Bread or crusty French Bread.
