Cauliflower Casserole
Now, Keto Friendly or low-carb doesn’t have to mean boring, does it? This Cauliflower Casserole certainly isn’t.
This dish is high in protein because of the eggs and cheese. This makes it a great choice for someone who doesn’t eat much meat.
It is also a very satisfying and filling side dish, or main course, if you are a vegetarian. But, you don’t need to be on a special diet to enjoy this delicious side dish. With all the cheesy goodness, what’s not to like?
Here are the steps to make the Cauliflower Casserole:
Preheat oven to 350 degrees Fahrenheit.
Cut the cauliflower into smaller pieces. Discard the stack and the outer leaves.
Cut the cauliflower into florets.

Bring a pot of water to a boil. Add the cauliflower to the pot. Cook until you can insert a knife into a floret piece without much resistance. It should be tender but still somewhat crunchy; not mushy.
Drain the cauliflower. Get rid of as much extra moisture as possible. Spread the cauliflower florets into a small casserole dish.
In a bowl, beat the eggs until fluffy.
Stir the cream into the eggs.
Add the melted and cooled butter to the eggs.
Add the salt, pepper, celery salt, and onion powder to the egg mixture.
Stir the white cheddar, parmesan, and mozzarella cheeses into the egg mixture.

Pour the egg mixture over the cauliflower.
Pop the casserole into a preheated oven for about 45 minutes. Keep you eyes on it. You might want to leave it in a little longer for a more golden brown top.
