Old Fashioned Pancakes
I developed this old fashioned pancake recipe after my husband repeatedly requested American pancakes for a weekend breakfast.
After testing out a variety of recipes, I came up with this one and have used it ever since. It’s actually just as easy as any of the box mixes, and tastes a lot better. Why didn’t I do this before?
These pancakes are great anytime of the day. My husband frequently requests them for dinner.
This is also something you can make ahead. I usually make the batter the night before I plan to use it.
This batter is so easy to make. If you have the ingredients ready to go, you can through this together in no time at all. I think it took me a total of 15 minutes to make the batter.
Here’s how you make it:
First you sift the flour, sugar, baking powder, and salt into a large mixing bowl.
Add the milk, eggs, vanilla extract, and melted butter to the dry ingredients. Either with a whisk or by using either a Kitchen Aid Mixer or a hand-held mixer, mix on low speed until a smooth batter forms. Do not over mix because it can harden the dough.
At this point, you can make the pancakes, or cover them with some clear wrap or foil and refrigerate them for a couple of hours, or even overnight.
Heat a little butter on medium heat in a pan. Lower the heat to low-medium. Add a small ladle full of the pancake batter to the pan.
Cook until little bubbles begin to form on the top. At this point you can check to see if the bottom looks done to your satisfaction.
Using a wide metal spatula, flip the pancake over. Cook until the bottom is done.
Serve with syrup of your choice. It might be a good idea to have several choices out for your family. I prefer a high quality organic maple syrup. My husband insists on Aunt Jemima syrup. Each to their own!
Would you like one, two, or more please!
