Fried Tortilla Breakfast
You’ll love this fried tortilla breakfast with fried Eggs, a crispy tortilla and queso fresco.
Cooking for One
I thew this breakfast together for myself one morning when I had tortillas left over after making enchiladas the previous day.
While I wrote this recipe for one person (me), it can be easily multiplied and made for 2, 3, or more people.
I used a corn and wheat blend tortilla for this recipe. The corn gives it that crunchiness and delicious corn taste, and the wheat makes it more flexible. As an aside, I love the taste of corn. I love just about any product with corn in it…corn pudding, grits, cornmeal mush, tamales, creamed corn, crunchy corn tacos, caramel corn, and so on.
Huevos Rancheros
I almost called this Huevos Rancheros. However, after researching the recipe, I kept asking myself, is it or isn’t it huevos rancheros? After all, most recipes for Huevos Rancheros have beans in them, and there are no beans to be found in my recipe. Maybe it should be Huevos con Tortilla? But anyway, whatever you call it, it is an absolutely delicious breakfast.
While this recipe looks sophisticated, it is actually easy to make.
Steps to a indulgent Fried Tortilla Breakfast:
First, heat a teaspoon of oil in a pan. Add the Tortilla.
Cook on medium heat until the tortilla starts to puff up.
Flip over and cook the other side. In this recipe, you actually want the tortillas to be a little crunchy. This is sightly different than when we are cooking the tortillas for a few seconds in oil before stuffing them for the Chicken Enchilada recipe. Slide the tortilla on a plate. If making more than one breakfast, repeat with each of the tortillas you will be using.
Next, heat another teaspoon of the oil in the same pan. Add the onions. Cook for 2-3 minutes, or until the onions just start to soften. Add the tomatoes. Cook for additional minute. Slide the mixture on top of your fried tortilla.
In the same pan, melt the butter. Add the eggs to the pan. Again, this recipe can be easily multiplied. Just add 2 eggs per person. Salt and pepper as desired. Cook sunny side up, until the egg whites set and a little crispy. To get the eggs to cook more evenly, cover the pan for a few seconds.
Slide the eggs on your tortilla.
Top with a generous amount of Queso Fresco. I am drooling just thinking about it.

- 2 Tsp Olive Oil
- 1/2 Tbsp Butter
- 2 Eggs
- 2 Tbsp Chopped Onion
- 2 Tbsp Chopped Tomato
- Pinch of Salt and Pepper
- 2-3 Tbsp Crumbled Queso Fresco Cheese
