Chocolate Chip Pancakes
If you are a chocolate lover like me, you’ll really enjoy these chocolate chip pancakes.
When I make breakfast pancakes (usually for dinner) at my house, I make a stack of Old Fashioned Pancakes for my husband, and a stack of these Chocolate Chip Pancakes for myself. If we’re super hungry, I’ll make some eggs and bacon on the side, but usually these pancakes are filling on their own.
One of the things that I really love about these pancakes is that they are rich, but not overly sweet. Also, that little bit of cinnamon works very well to enhance the chocolate. It’s not so much of an obvious, in your face flavor, but it gives it a hint of something special.
Steps to deliciously rich Chocolate Chip Pancakes:
Sift all of the dry ingredients in a large mixing bowl. I used my Stainless Steel Flour Sifter by AMCO Houseworks (no affiliate relation) to do the job. Using a sifter will get your dry ingredients incorporated more evenly and will also sift out any impurities from the flour.
Add the milk, eggs, vanilla extract, and melted butter. Mix until a smooth batters forms.
Heat a little of the butter on medium heat. Lower the heat to low-medium.
Add a ladle full of the pancake batter to the pan. I am using a regular soup ladle.
Add a small hand full of the chocolate chips to the pancake. I went a little overboard with mine, just because I like them so much. Put as many as your taste buds require.
Add a very small amount of the batter to cover the chocolate chips. This will help prevent the chocolate from burning. Cook until small bubbles form on the top.
At this point the bottom of the pancake should be set. Using a wide metal spatula, flip the pancake over. Cook until the bottom is done.
This recipe is so deliciously rich, you don’t really need too many toppings. However, I personally like a generous serving of real whipped cream, some natural Maple syrup, and a few chocolate chips. Just a thought. A happy thought.
Enjoy!
