After Thanksgiving Spicy Turkey Sandwich
This After Thanksgiving Spicy Turkey Sandwich will make you want to save an extra piece of turkey for the day after Thanksgiving. The sandwich has a combination of turkey, pepper jack cheese, white cheddar cheese, grilled onions, sautéed tomatoes and spicy mayo, all on buttery toasted bread.
I soooo look forward to Thanksgiving leftovers! As much as I love having people over, after a full week of cooking and cleaning and running around to make sure everyone has everything they need, I am actually too tired to eat on Thanksgiving Day.
The day after Thanksgiving is my time to relax and enjoy all of the leftover Thanksgiving goodies. Some of my favorite leftovers include: the Thanksgiving Stuffing, Spanish Rice, Turkey, and Pecan Pie. The Stuffing and Rice get turned into delicious breakfast items; the Pecan Pie (topped with ice cream) is my sweet indulgence; and the leftover turkey gets transformed into sandwiches.
Usually, I’ll make a very simple turkey sandwich with American Cheese and a little mayo. I was thinking of what would be a fun option for this year, and came up with this Spicy Turkey Sandwich. It’s so good! I think that the spice mayo makes it special.
This would be a delicious sandwich any time of year. If you want, you can substitute shredded chicken for turkey. I have and it tastes just as good.
Steps to an incredibly tasty turkey sandwich:
Heat about 1/2 tablespoon of butter on medium heat.
Add the chopped onions and cook until the onions soften and become translucent.
Add the chopped tomatoes and cook until the tomatoes soften. Set aside.
Heat another 1/2 a tablespoon of butter.
Set two slices of bread to the pan. Cook just until the beat begins to toast. You want the inside of the sandwich to withstand the fillings and not get soggy. Flip the bread over.
Add a slice of Hot Pepper Jack Cheese to one slice of bread, and two slices of White Cheddar Cheese to the other slice of bread. Lower the heat to low-medium.
Next, add about a tablespoon of the spicy mayo to each slice.
Scoop about a tablespoon of the onion and tomato mixture and add it to the slice of bread with the Hot Pepper Jack Cheese.
Add the turkey (or chicken) to the slice of bread with the Hot Pepper Jack Cheese. You may want to cover the pan for a few seconds to encourage the cheese to melt quicker.
Sandwich the bread with the White Cheddar Cheese to top the slice of bread with the turkey.
You are ready to serve. You can serve whole or move the sandwich to a wooden board and cut into two.

- 1 Tablespoon Chopped Tomato
- 2 Slices Honey Wheat Bread (or bread of your choice)
- 1 Slice Hot Pepper Jack Cheese
- 2 Slices White Cheddar Cheese
- 2 Tablespoons Spicy Mayo
- 1/3 Cup Shredded Turkey (or Chicken)

For the Spicy Mayo:
In a small bowl, combine the mayo with the paprika, cayenne pepper, and hot sauce.
Stir.
That’s it. It’s that easy. Refrigerate until you are ready to use it.
Spicy Mayo
Ingredients
- 1/2 Cup Mayonaise
- 1/8 Teaspoon Paprika
- 1/8 Teapoon Cayenne Pepper
- 2 to 3 Teaspoons Hot Sauce
