Bacon Stuffed Mushrooms
Sometimes having a cocktail party with hearty appetizers (such as these Bacon Stuffed Mushrooms) is just more fun than having a formal sit down dinner. It frees the host up to walk around the room and enjoy the company. You just have to make sure that you have a few appetizers that are hardy enough so that your guests don’t leave hungry.
You’ll love serving these tasty bacon stuffed mushrooms at your next Christmas or New Years party or get-together. Paired with a couple of additional appetizers, they are as filling as a meal.
This recipe is super easy to make. You can also prepare them in the morning or afternoon, and bake them right before guests arrive.
Easy to reheat, these bacon stuffed mushrooms are also a good option for bringing with you at a potluck.
Steps to delicious Bacon Stuffed Mushroom appetizer:
Preheat oven to 350 degrees Fahrenheit.
Clean each mushroom by using a damp towel to wipe off any dirt. Since mushrooms naturally contain a high amount of water, you don’t want them to soak up any more water.
Remove Stems from the mushrooms. Keep about a 1/3 of the stems and discard the rest.
Heat a pan to medium heat. Dice the bacon and cook until only slightly crispy. Do not overcook. Transfer the cooked bacon to a small bowl.
In the same pan. Add a teaspoon of olive oil. Lower the heat to a low-medium and cook the onions until soft and translucent.
Chop the mushroom stems and add them to the pan with the onions. Cook the mushrooms and onions until the mushrooms begin to soften. Transfer the mushrooms and onions to the bowl with the bacon.
Add the bread crumbs, eggs, chicken stock, dill, parsley, salt, pepper, and onion powder to the bowl. Stir in the parmesan and mozzarella.
Stuff each mushroom cap with as much of the stuffing as you desire. I used 2 (6 ounce) boxes of the Bella Mushrooms, overstuffed them, and put them in a 10 inch round baking dish. They look really cute. You can also easily stretch this recipe out. If you are using 3 (6 ounce) boxes of the Bella Mushrooms, you will need a 9 by 13 inch baking dish. They will be just as good, but not as stuffed.
Drizzle the melted butter on and around the mushrooms.
Bake for 20 to 22 minutes.

- 2 to 3 (6 ounce) boxes Baby Bella Mushrooms
- 2-1/2 Slices Bacon
- 1 Teaspoon Olive Oil
- 1/2 Cup Chopped Sweet Yellow Onion
- 1 Cup Plain Dried Bread Crumbs
- 3 Eggs
- 3 Tablespoons Chicken Stock
- 1 Teaspoon Dried Dill Weed
- 1 Teaspoon Dried Parsley
- 1 Teaspoon Salt
- 1/4 Teaspoon Pepper
- 1 Teaspoon Onion Powder
- 1/4 Cup Grated Parmesan Cheese
- 1/2 Cup Shredded Mozzarella Cheese
- 5 Tablespoons Butter (melted)

Recipe Notes
I used 2 (6 ounce) boxes of the Bella Mushrooms in my recipe. Doing so, you'll have overstuffed mushrooms that looks really cute. However, you could also easily distribute the mixture into 3 (6 ounce) boxes of the Bella Mushrooms.
