Lime Jello Fluff Salad

My mom used to make this beautiful pastel green jello salad on Christmas and other special occasion family gatherings. It’s a recipe she got from one of the secretaries at the school where she was teaching. I remember one day she can home excited and declared, “I have a new recipe I’m going to try out!” It’s been on our holiday tables for many years since that time.
It’s green color makes it a perfect side dish or dessert for Christmas, St. Patrick’s Day. For Christmas, I would add some maraschino cherries for that red and green contrast.
For St. Patty’s, I would add an extra tablespoon of the green lime jello powder for an extra pop of color.
It’s bright pastel color also make it pretty enough for Easter. It would look great next to colored eggs.
While it’s the Lime Jello Fluff Salad is also nice looking on the Thanksgiving table, I would think that will all of the pies, this might be overkill. But, it’s still an option.
Is the lime jello fluff salad a salad or dessert?
Well, it’s kind of both. It’s a dessert salad. The inclusion of the crushed pineapple qualifies it as a fruit salad. However, the cottage cheese, marshmallows, and cool whip definitely make it a dessert.
I’ve been googling the ingredients to the recipe and it appears to be some kind of a variation on the Watergate Salad. The main difference is that the Watergate Salad has pistachio instead of lime. As much as I like pistachios, I think that the lime flavor give this dessert a nice, tangy taste.
Being so quick to make and easy to double and triple, this would also make a good potluck dish to bring with you to your next church gathering.
Quick and Easy Recipe
The recipe is so very easy to make. You can toss it together in just a few minutes.
To make it even better, you could make this recipe directly in the dish you plan to serve it in. I used a large Trifle Dish. You can use a bowl.
How to make Lime Jello Fluff Salad:
Take a clear, deep, serving dish and dump in the cottage cheese.
Next, using a rubber spatula, stir in the cool whip. This will add a nice sticky base for the marshmallows, which come next.
Next, stir in the mini marshmallows.
The mini marshmallows add a nice fluffy texture. It looks yummy already.
Once you have the marshmallows stirred in, it’s time to toss in the chopped walnuts. This adds a really nice crunch to the jello fluff salad. If you want to change things arounds, you can add some crushed pecans instead.
Next, comes the crushed pineapple. This also adds a nice crunch and natural tangy-sweetness.
The jello fluff salad is delicious at this point.
Give it a taste. If you want to add some more nuts, you can. Also, my mom added about 1/4 cup of sugar to the jello salad. I don’t see that in add other similar recipes, but I would actually recommend it if you are serving this as a dessert salad.
Next comes the jello. My mom always used the lime green jello. You can add any flavor that goes with pineapple. You can add orange flavored jello and make this into a Orange Jello Fluff Salad.
Like I mentioned earlier, you can add some maraschino cherries for a more festive, Christmas look.
Anyways, the last must-do step is to refrigerate it several hours, but preferably overnight.

Ingredients
- 24 Ounce Container Cottage Cheese
- 8 Ounce Container Cool Whip (Original not Light)
- 10 Ounce Bag Mini Marshmallows
- 1 to 1-1/2 Cups Chopped Walnuts
- 20 Ounce Can Crushed Pineapple
- 6 Ounce Box Lime Flavored Jello
- 1/4 Cup Suar (Optional, but Recommended)
- Marchino Cherries to decorate (Optional)
Instructions

Add the cottage cheese in a Trifle Dish or clear bowl.
