Penne Alla Vodka with Chicken
This pasta dish is creamy, delicious, and full of flavor. It’s the type of dish you’ll want to curl up on the sofa with on a cold evening.

How to make Penne Alla Vodka with Chicken:
Bring a pot of water to a boil. Add the penne pasta, along with a tablespoon of salt and a tablespoon of olive oil. Cook to the lower end of the manufacturer’s directions. Drain and set aside.
In a large casserole pot, heat the tomato puree on medium heat.
Add the parsley, 2 teaspoons of the salt, and pepper.
Stir in the cream cheese and continue stirring until the cream cheese melts. This will add an extra richness to the dish.
Add the butter. Cook until the butter melts. This will add yet another layer of richness.
Add the vodka. Cook for 2 to 4 minutes, depending on how much of the vodka alcohol you want to cook out. Remember, it will still retain some of its alcohol content.
Lower the heat to low-medium, and stir in the heavy cream.
Stir in the parmesan cheese. This will a little natural saltiness.
Also, now would be the time to add in your cooked chicken. You can omit the chicken if you are serving this as a vegetarian dish.
At this point, stir in the cooked pasta. Make sure to cover all of the pasta with the sauce. You may want to toss in a little more parsley for color.
Top each individual serving with a little more of the parmesan cheese. Enjoy!

- 1 (1 Pound) Box Penne Pasta
- 1 Tablespoon Salt
- 1 Tablespoon Olive Oil
- 1 (24 Ounce) Jar Tomato Puree or Pasta Sauce
- 2-3 Tablespoons Dried Parsley
- 2 Teaspoons Salt
- 1/4 Teaspoon Pepper
- 4 Tablespoons Cream Cheese
- 4 Tablespoons Butter
- 1/2 Cup Vodka
- 1 Cup Heavy Cream
- 3/4 Cup Parmesan Cheese (plus extra to plate)
- 1 Cup Shredded or Chopped Cooked Chicken (you can use leftover chicken or store bought)
