Cauliflower Casserole
Now, Keto Friendly or low-carb doesn’t have to mean boring, does it? This Cauliflower Casserole certainly isn’t.
This dish is high in protein because of the eggs and cheese. This makes it a great choice for someone who doesn’t eat much meat.
It is also a very satisfying and filling side dish, or main course, if you are a vegetarian. But, you don’t need to be on a special diet to enjoy this delicious side dish. With all the cheesy goodness, what’s not to like?
Here are the steps to make the Cauliflower Casserole:
- Preheat oven to 350 degrees Fahrenheit.
- Cut the cauliflower into smaller pieces. Discard the stack and the outer leaves.
- Cut the cauliflower into florets.
- Bring a pot of water to a boil. Add the cauliflower to the pot. Cook until you can insert a knife into a floret piece without much resistance. It should be tender but still somewhat crunchy; not mushy.
- Drain the cauliflower. Get rid of as much extra moisture as possible. Spread the cauliflower florets into a small casserole dish.
- In a bowl, beat the eggs until fluffy.
- Stir the cream into the eggs.
- Add the melted and cooled butter to the eggs.
- Add the salt, pepper, celery salt, and onion powder to the egg mixture.
- Stir the white cheddar, parmesan, and mozzarella cheeses into the egg mixture.
- Pour the egg mixture over the cauliflower.
- Pop the casserole into a preheated oven for about 45 minutes. Keep you eyes on it. You might want to leave it in a little longer for a more golden brown top.

- 2 Cups Shredded White Cheddar Cheese
- 1/2 Cup Shredded or Ground Parmesan Cheese
- 1/2 Cup Shredded Mozzarella Cheese
