Chocolate Pancakes
Occasionally, I’ll get a craving for some rich delicious chocolate pancakes for breakfast. Unfortunately, not all diners serve chocolate pancakes; and when they do, it’s usually around Christmas or some other holiday where chocolate consumption goes up.
What’s more, those box mixes rarely have chocolate pancakes. What’s a chocolate-craving girl to do? Luckily, homemade pancakes are just as easy to make but are a lot more delicious. As a pancake snob, I came up with my own recipe for pancakes, including these chocolate pancakes.
These chocolate pancakes are chocolaty, rich and fluffy.
Here’s how you make rich and fluffy chocolate pancakes:
First you sift the flour, cocoa powder, sugar, baking powder, and salt into a large mixing bowl.
Make sure that your dry ingredients are combined evenly.
Add the milk, eggs, vanilla extract, and melted butter to the dry ingredients. Either with a whisk or by using either a Kitchen Aid Mixer or a hand-held mixer, mix on low speed until a smooth batter forms.
Do not over mix because it can harden the dough.
At this point, you can make the pancakes, or cover them with some clear wrap or foil and refrigerate them for a couple of hours, or even overnight.
Heat a little butter on medium heat in a pan. Lower the heat to a low to low-medium. Add a small ladle full of the pancake batter to the pan. The chocolate pancakes burn more easily so keep a close eye on them.
Cook until little bubbles begin to form on the top. At this point you can check to see if the bottom looks done to your satisfaction.
Using a wide metal spatula, flip the pancake over. Cook until the bottom is done.
Serve with whipped cream and syrup of your choice. It might be a good idea to have several choices out for your family.

Ingredients
- 2 Cups + 1 tablespoon Flour (all purpose)
- 5 Tablespoons Sugar
- 2 Teaspoons Baking Powder
- 1/4 Teaspoon Salt
- 4 Tablespoons Good Quality 100% Cocoa Powder
- 1-1/2 Cups Milk
- 2 Eggs
- 1 Teaspoon Vanilla Extract
- 3 Tablespoons Butter (melted)
- Additional Butter to grease the pan.
Instructions
