Spicy Shredded Chicken Sandwich
This Spicy Shredded Chicken Sandwich is one of our go to dinner ideas when I have leftover baked chicken in the house. Or, sometime I just buy some baked chicken from the supermarket just so I can make this delicious sandwich.
This Spicy Shredded Chicken Sandwich has it all. It incorporates all four major food groups. It’s crunchy; it’s cheesy; and it’s spicy. The spicy factor comes from my Spicy Mayo recipe. I really recommend this Spicy Mayo recipe for more than this sandwich.
How to make a spicy shredded chicken sandwich:
Heat a pan on low-medium heat. Melt about a tablespoon of butter in the pan. Add the chopped yellow onions to the pan. Cook until the onions soften. Set aside.
Heat a pan to medium heat. Add a teaspoon of butter. Add two to four slices of bread at a time (depending on the size of your pan. Cook until the bread just starts to firm up. We are doing this step so that the sandwich is not soggy on the inside. I really hate a soggy sandwich.
Flip the bread over. You can add a little bit more butter if you think it needs it.
Lower the heat to low medium. Then next few steps will take a little time, so you don’t want to burn the bread.
Spread some of the spicy mayo on each slice of bread. This is why we toasted the bread in the pan earlier.
Add cheese to each slice of bread. I am always a bit too generous with the cheese!
Cover the pan for about 30 seconds to encourage the cheese to start melting.
Add a tablespoon or two of the onions on one slice. This will be your bottom slice of bread.
Top that bottom slice of bread with a handful of the shredded baked chicken.
Top that same slice with a drizzle (or dollop) of the spicy mayo.
Sandwich the slice of bread with the cheese on top of the bread with all of the other toppings. At this point, you can cover the pan again for a few seconds so that the cheese finishes to melt and holds the other ingredients together.

- 1 Recipe Spicy Mayo
- 8 Slices Sandwich Bread (Butter Top or Honey Wheat work will)
- About 2 Cups Shredded Baked Chicken (I use a combination of light and dark meat)
- About 1 Cup Shredded Cheddar or Spicy Jack Cheese or 8 slices of either cheeses
