Keto Friendly BBQ Chicken
This BBQ Chicken Drumstick recipe is perfect for my Keto following friends. While this blog is not specifically about a particular way of eating, I like to give options. In this way, no one is deprived of a good BBQ chicken. 🍗😀
The thing with traditional BBQ sauce is that it is packed with corn syrup and sugar. Both a no-no under a Keto diet. This recipe has neither. All we have here is protein (the chicken drumsticks), fat (the butter), and spices. Lots of spices.
How to make Easy Dry Rub BBQ Chicken Drumsticks
Preheat the oven to 330 degrees Fahrenheit.
Line a sheet pan with non-stick foil. This will make for a super fast and easy clean-up later.
Take out a stick of butter out several hours before you start cooking. The butter should be soft, but not melted.
Below is a stick of butter that I squished with my hand to show how malleable it is.
Side note: take your rings and bracelets off before you start cooking. While this is a very easy recipe; it is also a very messy recipe. Unless you wear plastic gloves, your hands will get buttery and greasy. No one wants to scrub butter out of their rings.
In a bowl, add the paprika, onion powder, chipotle chili pepper, salt, cayenne pepper, California chili pepper, celery salt, garlic powder, and pepper. Stir or toss to combine. This combination makes for a smoky-spicy rub. However, once you bake it, the spice effect will be minimal.
Slather each piece of chicken with the softened butter. Make sure that you get under the skin and in each crevasse.
The butter will not only act as the glue to our chicken but will make the chicken more tender and more flavorful. Butter makes everything taste better.
Cover each drumstick with the BBQ Dry Rub Spice Mixture.
Lay the chicken drumsticks on the prepared pan.
Bake in a preheated oven for 1 hour and 15 minutes to 1 hour and 30 minutes.

- 3 to 3-1/2 Lbs Chicken Drumsticks
- 8 Tablespoons (1 Stick) Butter (at room temperature)
- 3 Tablespoons Ground Paprika
- 1 Tablespoon Onion Powder
- 1 Teaspoon Ground Chipotle Chili Pepper
- 1 Teaspoon Salt
- 1/2 Teaspoon Ground Cayenne Pepper
- 1/2 Teaspoon Ground California Chili Pepper
- 1/2 Teaspoon Celery Salt
- 1/4 Teaspoon Garlic Powder
- 1/8 Teaspoon Ground Pepper
