Chicken Salad Sandwich
I really love a good Chicken Salad Sandwich. Whenever, I attend meeting or church potluck where sandwiches are served, I immediately look to see if anyone brought a tray of Chicken Salad Sandwiches. My thought is, turkey Sandwiches are great but Chicken Salad Sandwiches are even better.
However, I have to admit…I am one of those picky eaters that takes out the any fruits, nuts, or other items in my sandwich. So, if it has anything like grapes, I will pick them out. Nuts or olives must go too. You get the idea. This version of the Chicken Salad Sandwich is so simple, a child (or I) can eat it.
Now, the key to a good Chicken Salad Sandwich is high quality ingredients. I use freshly baked chicken, mayonnaise, organic celery and onion, spices, cheese, and croissants.
How to make a classic chicken salad sandwich
Add the baked chicken in a large bowl. This is a perfect use for your leftover baked chicken. If you don’t have any leftover chicken, you can easily pick a baked chicken from your local supermarket. My favorite is Sprouts’ Organic Baked Chicken. You can get it unseasoned or seasoned. It’s smaller than other supermarket’s ready baked chicken, but the taste is oh so good!
Next, stir in the mayonnaise. Preferably, I would use a homemade mayonnaise, or a quality, organic mayonnaise. However, if you don’t have any homemade mayo on hand, make sure that you use a good quality, full fat mayonnaise that is made with egg yolks.
Mix in the onions, celery, and carrots.
This is what officially makes this a “salad.” This is also what will give your Chicken Salad a little crunch.
Next, stir in the salt, dill weed, onion powder, mustard powder, and pepper. The dill adds such a nice flavor. Boy, do I love the smell of dill weed.

To assemble the sandwiches, you will need to cut each croissant in half horizontally and spread a little mayo on the bottom piece. This will hold the cheese in place.
Now, add a slice of cheese to the bottom slice of the croissant. Swiss cheese is classic, but I also love using some organic white cheddar.
Add a generous portion of chicken salad on top of the cheese. At this point, if you want a second slice of cheese, you can add it.
Otherwise, top with the top half of the croissant, and enjoy!

You can easily turn this into a Keto Friendly Chicken Salad Sandwich by substituting the croissant for a lettuce wrap.

Ingredients
- 4-6 Large Croissants
- 4 Cups Baked and shredded or chopped chicken breasts
- 3/4 Cup Mayonnaise
- 2 Tablespoons finely chopped Onion
- 4 Tablsepoons finely chopped Celery
- 1 Tablespoon shredded and finely chopped Carrot
- 1/2-1 Teaspoon Dill Weed
- 3/4 Teaspoon Salt
- 1/2 Teaspoon Onion Powder
- 1/4 Teaspoon Mustard Powder
- Pepper to taste
- 4-6 Slices Swiss Cheese or White Cheddar Cheese
