Spaghetti with Browned Butter and Mizithra
Spaghetti with Browned Butter and Mizithra Cheese is one of my favorite all time meatless dishes. It’s flavorful, satisfying, and contains one of my favorite cheeses, the Greek Mizithra cheese.
What is Mizithra Cheese?
Mizithra Cheese is a Greek cheese that, in my opinion, tastes even better on spaghetti than parmesan. The taste is both savory and sweet. Depending on where it is in the aging process, it can be soft or hard. Combined with butter, especially browned butter, it is a taste that is addictively good and can go with many dishes, especially spaghetti.
Surprisingly, even though I am part Greek, the first time I had a dish with Mizithra Cheese was at the Old Spaghetti Factory. I fell in love with that taste ever since.
Quick and Easy Dinner Idea
This is the ultimate quick and easy dinner idea. This delicious and satisfying dinner recipe requires only a handful of ingredients and about 30 minutes to make.
There are 3 main ingredients: spaghetti, butter, and Mizithra cheese.
How to make Spaghetti with Browned Butter and Mizithra Cheese:
Bring a tall pot of water to a boil. Add some oil and salt. Add your pasta. Cook according to your pasta manufacturer’s instructions. However, test it to make sure it’s ready a minute or two before. You want to be sure that the pasta still has a little firmness (al dente) and is not mushy.
Drain the pasta using a colander. Set aside.
In the same pot (because we don’t like wasting time washing dishes 😉), add the butter. Lower the heat to a low-medium temperature. Occasionally stir the butter around the pot with a wooden spoon.
The butter will go through stages until it gets to a nutty sweetness.
First, the butter will melt.
…and melt.
Then, the butter will foam.
Then, the butter will start to brown on the butter. It is important to keep a close watch on your butter at this point. It can go from sweet, nutty deliciousness to burnt in a short time if you don’t pay attention.
Remove the butter from the heat at this point and continue stirring to cool down the sauce.
Gently toss the pasta into the browned butter sauce. Make sure you get that delicious browned butter sauce incorporated into all the pasta.
Then, toss about 5 to 6 ounces of the mizithra cheese with the spaghetti and browned butter.
Once you plate a portion of the spaghetti, top it with some additional mizithra cheese. I like a lot of cheese on mine. 😋
You can also add a little bit of parsley to top it off.
Enjoy!
