High Protein Egg Bake
If you are looking for a new breakfast item that is filling and low carb, this is it. This tasty high protein egg bake with cottage cheese, sausage and bacon will keep you full for hours.

Ingredients for the high protein egg bake
- 6 thick cut slices of bacon
- 1 lb ground sausage
- 1-1/2 cups shredded cheddar cheese
- 1/2 cup shredded gruyere cheese
- 14 large eggs
- 1-1/4 cups heavy cream
- 1/2 cup cottage cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
Instructions
- Cook the bacon on medium heat for about 2 minutes per side, or until crispy-ish. You want it slightly crisp but not dry.
- Remove the bacon from the pan and slice into small slices. I used kitchen scissors for this.
- Keep about half of the bacon fat in the pan for flavor. In the same pan, on low-medium heat, cook the ground sausage until no longer pink. This will take about 4 minutes. You will need a wooden spoon to stir and break the meat apart while cooking.
- Add the ground sausage to a 9 x 13 inch baking dish.
- Top that will the sliced bacon pieces.
- Add the blend of cheeses to the dish.
- In a large bowl, combine the eggs, heavy cream, cottage cheese, salt, pepper, onion powder and cayenne pepper. Using an electric mixer, combine until smooth.
- Pour the egg mixture into the baking dish.
- Bake in a preheated oven at 350 degrees Fahrenheit for about 35 minutes, or until the center looks set and until slightly golden on top.
This egg bake is a lot like a crustless quiche.
It’s great hot or at room temperature.
