Instructions
Season each chicken thigh with the salt, onion powder, and pepper. Make sure to season under the skin too.
Stuff a chunk of butter under the skin of each thigh. This will make your chicken extra tender and tasty.
In a small bowl or cup, combine the apricot preserve with the honey. The honey will help make the glaze sticky. Add a tablespoon of water to dilute the glaze and make it more spreadable. Mix well. Brush or spoon the glaze over each chicken piece and under the skin. You want to make sure to get that delicious flavor on the actual meat of the chicken.
Cover a baking dish with nonstick foil for easeir clean up. Then, put the chicken on a baking dish with a rack on it so that the underside of the chicken cooks evenly, and doesn't stew in its juices. Cover and bake at 350 degrees Fahrenheit for 1 hour. Uncover and continue to bake for about 45 to 50 minutes or until the top of the chicken is golden.
