Kielbasa Soup

This Kielbasa Soup is full of sausages, potatoes, and vegetables.  The spices and sour cream give it a tangy and smoky flavor.

Ingredients

  • 2 slices uncured bacon chopped
  • 2 tablespoons butter
  • 3/4 cup carrot chopped
  • 3/4 cup onion chopped
  • 3/4 cup bell pepper chopped
  • 3 lb potatoes chopped
  • 1 Kielbasa Sausage chopped
  • 1-1/2 cup broccoli chopped
  • 1 cup vine-ripened tomatoes, diced
  • 6 to 7 cups chicken stock
  • 4 tablespoons ketchup
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon dried parsley
  • 2 teaspoons dried dill
  • 1 chicken bullion cube
  • 1/4 to 1/2 teaspoon smoked paprika this along with the sausage will give the soup that smoky aroma
  • 1 teaspoon onion powder
  • 1/3 to 1/2 cup sour cream depending on how tangy you like it

Instructions

  1. Combine the butter and bacon in a pot.  On medium heat, cook until the butter melts and the bacon starts to render some fat.
  2. Add the carrots, celery, onions, and pepper to the bacon fat.  Cook for about 6 minutes, or until the vegetables start to soften.
  3. Stir in the kielbasa sausage pieces.  Cook for 1 minute.
  4. Add the potatoes and broccoli.  Cook for 1 minute.
  5. Next, add the diced tomatoes, chicken stock, ketchup, and spices (salt, pepper, parsley, dill, bouillon cube, smoked paprika, and onion powder.
  6. Simmer on medium heat for about 30-35 minutes, or until the potatoes are cooked.
  7. In a measuring cup, combine the sour cream with a ladle of the soup to bring the cream to temperature. Otherwise, it could curdle.  Pour the mixture back into the pot.  This will give the soup that delicious tangy flavor.
