Ingredients

  • Approximately 2 pounds of chicken thighs with the skin on
  • 8 tablespoons unsalted butter softened
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon sweet paprika
  • 2 generous tablespoons natural maple syrup
  • 1/4 teaspoon balsamic vinegar for a little zing

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.  Line a baking sheet with nonstick foil for easier cleanup. Place a baking rack on the baking sheet.  This will help the chicken to cook more evenly on its underside.  Also, the chicken will not stew in its own juices.
  2. Prepare your maple butter glaze.  In a small mixing bowl, combine the softened butter with salt, pepper, onion powder, paprika, maple syrup, and balsamic vinegar.
  3. Rub a generous amount of the maple butter mixture on each chicken thighs, making sure to put plenty under the skin of the chicken thighs.
  4. Cover the chicken with nonstick foil.  Bake in the preheated oven for 1 hour.
  5. Uncover the chicken and bake for about another 30 minutes, or until golden.  Since over temperature varies, check on your chicken thighs after about 20 minutes.
