Steakhouse Creamed Spinach

Ingredients

  • 3 Pounds Chopped Spinach
  • 1 Tablespoon Salt, plus more to taste
  • 1/2 Cup (1 Stick) Sweet Cream Butter
  • 2 Cups Heavy Cream
  • 1/2 Cup Shredded Parmigiano-Reggiano or Parmesan Cheese
  • 1/2 Cup Cheddar Cheese
  • 1/8 Teaspoon Ground Pepper
  • 1/4 Teaspoon Onion Powder

Instructions

  1. Bring a pot of water to a simmer.  Add a generous tablespoon of salt.  Add the frozen spinach.  Cook until the leaves come apart.

  2. Drain the spinach thoroughly.  Squeeze as much of the water out as you can.

  3. Melt the butter on low-medium heat.

  4. Add the cream.  Cook until the mixture starts to thicken and you can coat the back of a wooden spoon.

  5. Add the pepper, onion powder, and garlic powder.  Don't add any more salt until you have added the parmesan cheese and spinach.  

  6. Stir in the parmesan and cheddar cheeses.

  7. Stir the spinach into the cream sauce.
