1tablespoonlight olive oil
1tablespoonminced onion
1/2teaspoonminced garlic
6Vine Ripe Campari Tomatoes
pinchof salt

3large eggs
1 to 2ouncesFeta cheese
Instructions
Heat olive oil in a pan on low-medium heat. Cook the minced onion for about 4 minutes, or until tender.
Add the garlic. Cook for an additional 1 to 2 minutes.
Cook the tomatoes for 10 minutes, or until the liquid evaporates.
In a small bowl, beat 3 large eggs. Stir the eggs into the tomato sauce. Cook for about 3 to 4 minutes, or until your preferred level of doneness.
