Strapatsada

Strapatsada, the famous Greek scrambled tomato eggs can be made with 3 basic ingredients: olive oil, tomatoes, and eggs. Most often, the dish includes Feta cheese and onions and/or garlic.

Ingredients

For One Serving:

  • 1 tablespoon light olive oil
  • 1 tablespoon minced onion
  • 1/2 teaspoon minced garlic
  • 6 Vine Ripe Campari Tomatoes
  • pinch of salt
  • pinch of black pepper
  • 3 large eggs
  • 1 to 2 ounces Feta cheese

Instructions

  1. Heat olive oil in a pan on low-medium heat.  Cook the minced onion for about 4 minutes, or until tender.
  2. Add the garlic. Cook for an additional 1 to 2 minutes.
  3. Cook the tomatoes for 10 minutes, or until the liquid evaporates.
  4. In a small bowl, beat 3 large eggs.  Stir the eggs into the tomato sauce.  Cook for about 3 to 4 minutes, or until your preferred level of doneness.
  5. Stir in a generous amount of Feta cheese.
