Tips for making mimosa cocktails:
- Use a sparkling wine you would drink on its own. Mixing it with other ingredients will not help if you start with a mediocre tasting sparkling wine.
- Refrigerate the Champaign or sparkling wine for several hours before using.
- Use a thick fabric kitchen towel when opening the bottle. This is of course, if you don’t want the cork to hit the ceiling. Never, never, use a wine bottle opener.

The Mimosa and the Grand Mimosa
The most basic, classic Mimosa is half Champaign (or other sparkling wine) and orange juice. The International Bartenders Association used equal parts orange juice and Prosecco.
Some put a little more orange juice for a more orangey flavor. Others put more sparkling wine, for a more bubbly, lighter drink. You can adjust it to your liking.
The Grand Mimosa goes a little extra step to add a splash of Grand Marnier (or other orange flavored liquor). This really accentuates the orange flavors.
The Cranberry Mimosa (also known as the Poinsettia)
As the name might suggest, you use cranberry juice instead of orange juice. The is probably the prettiest of the mimosas.
The Cranberry Mimosa’s bright red color makes it a perfect drink for a Christmas party or dinner. The cranberry taste also pairs up very well with Thanksgiving dinner.
As with the classic orange Mimosa, you can adjust the amount of sparking wine to cranberry juice to your liking. Like the Grand Mimosa, this drink takes a little orange flavored liquor.
The Pineapple Mimosa
This mimosa is absolutely refreshing. It has a bright, crisp cheerful taste. For this drink, I used equal parts pineapple juice and Champaign or sparkling wine, and added a splash of pineapple flavored vodka to it.
The Orange-Pineapple Mimosa
This Mimosa is like a day on the beach. It’s like sipping a mini vacation in a glass.
As the name would suggest, I have combined the ingredients of the Grand Mimosa and the Pineapple Mimosa into one outstanding drink. You might need a bigger glass for this one because we have 1/2 half part sparkling wine, 1/4 part orange juice, 1/4 part pineapple juice, a splash of Grand Marnier (or other orange flavored liquor), and a splash of pineapple vodka.

Follow that by the orange flavored liquor, and pineapple flavored vodka. You should be about half way to the top of the glass.
