Easy Ground Beef Taco Casserole

You have all the delicious flavors of a traditional ground beef taco, layered in an easy to make and serve dish.
This dish is perfect for a casual family meal or your next church or work potluck.
What makes this taco casserole so good?
My secret to an authentic tasting Taco Casserole is the type of tortillas I use. The best tortillas for this dish is a combination of corn and flour. I use La Tortilla Factory Handmade Style Tortillas. They are soft and flexible and non GMO verified.
The second trick is to cook each tortilla individually in a little oil for a few seconds per side. I used about 1/2 a teaspoon per tortilla. This gives it a better texture for layering and better flavor.
Steps
Pre-heat oven to 350 degrees Fahrenheit.
Melt the butter in a large pan. Add the onions and cook on medium heat until the onions begin to soften.
Add the ground beef. Cook until the beef is no longer pink.
Mix in the seasoning and canned tomato. Cook for about 10 to 15 minutes, or until the mixture begins to thicken.
Turn the heat off and stir in three tablespoons of the sour cream.
Pour half a teaspoon of the oil in a 9 x 13 inch baking dish. Add your first layer of tortillas. You will need 6 tortillas for this layer.
Next, spread half of the ground beef mixture on the tortillas.
Follow this by half of the shredded cheese.
Add the second layer of the tortillas.
Layer the second half of the ground beef mixture.
Spread the remainder of the cheese on top of the beef mixture.
Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 5 minutes.
Serve with a dollop of sour cream.

- 2 Pounds Ground Beef
- 1 Teaspoon Salt
- 1/8 Teaspoon Pepper
- 2 Envelopes Taco Seasoning
- 1 Teaspoon Onion Powder
- 2 Cans Diced Tomatoes
- 3 Tablespoons Sour Cream (plus extra to serve)
- 3 to 4 Cups Shredded Mexican Blend Cheese
