BBQ Chicken Flatbread

This flatbread has sweet and tangy bbq sauce, lots of mozzarella and smoked Gouda, red onions, and a generous portion of baked chicken.

How do I keep my flatbreads from getting soggy?
To keep your flatbreads from getting soggy, put a baking rack on top of your sheet pan. This will prevent the flatbread from stewing in the juices that drip from the cheese.
Ingredients (what you’ll need for two bbq chicken flatbreads):
- Two flatbreads of your choice. Original Naan or Garlic Naan pair well with the bbq sauce
- 2 tablespoons tomato paste
- 5 tablespoons bbq sauce of you choice (plus a little extra to drizzle on top)
- 3/4 cup low-moisture part-skim mozzarella, shredded. Ideally, use the whole milk kind. Do not use low-fat. It does not melt very well
- 1/4 cup smoked Gouda, shredded
- 1/2 red onion, sliced
- 1/2 cup baked chicken, shredded or chopped
How to assemble and make the bbq chicken flatbreads:
- Lay the flatbreads on a sheet pan with a baking rack. The baking rack is not mandatory but will prevent the flatbreads from getting soft and soggy.
- In a small bowl, combine the bbq sauce and tomato paste. Spread the sauce over each flatbread.
- Combine the mozzarella and Gouda, and spread them over the bbq sauce.
- Spread the chicken and onion over the cheese.
- Drizzle a little bbq sauce over the pizza.
- Bake in a preheated oven at 400 degree Fahrenheit for about 15 minutes.
