Apricot Glazed Chicken Thighs
These Apricot Glazed chicken thighs are tender, juicy, and full of delicious flavor. You will not believe how easy it is to prep them. Then, pop them in the oven and relax. You can even prep them the day before.
What you’ll need for the Apricot Glazed Chicken Thighs:
- 2 lbs of chicken thighs with skin on (I prefer organic)
- 2 teaspoons salt
- 1 teaspoon onion powder
- 1/4 teaspoon black pepper
- 4 tablespoons butter, cut into chunks
- 4 tablespoons apricot preserve or jam
- 1 teaspoon honey
Steps to prepping and baking this delicious chicken dish:
- Season each chicken thigh with the salt, onion powder, and pepper. Make sure to season under the skin too.
- Stuff a chunk of butter under the skin of each thigh. This will make your chicken extra tender and tasty.
- In a small bowl or cup, combine the apricot preserve with the honey. The honey will help make the glaze sticky. Add a tablespoon of water to dilute the glaze and make it more spreadable. Mix well. Brush or spoon the glaze over each chicken piece and under the skin. You want to make sure to get that delicious flavor on the actual meat of the chicken.
- Cover a baking dish with nonstick foil for easeir clean up. Then, put the chicken on a baking dish with a rack on it so that the underside of the chicken cooks evenly, and doesn’t stew in its juices. Cover and bake at 350 degrees Fahrenheit for 1 hour. Uncover and continue to bake for about 45 to 50 minutes or until the top of the chicken is golden.
