Pimento Cheese Chicken
This Pimento Cheese Chicken recipe is bursting with flavor. Spicy, seasoned chicken is topped with a blend of four cheeses (cream cheese, cheddar, parmesan, and mozzarella) and pimentos.
You’ll be happy to know that this recipe is on my low-carb and keto friendly list of recipes. This Pimento Cheese Chicken is filling on its own and doesn’t really need a side. However, if you do go with a side, my Steakhouse Creamed Spinach would go great next to it.
What is a Pimento?
Pimento (also known as Pimiento or Cherry Pepper) is a small, round, mild chili pepper.
Ingredients for Pimento Cheese Chicken
- 4 Chicken breast pieces, pounded until about 3/4 inch thick using a meat mallet or rolling pin (note: this will help tenderize the chicken)
For the Spice Mixture:
- 1-1/4 teaspoons salt
- 1-1/4 teaspoons onion powder
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon celery salt
- 1/4 teaspoon crushed red pepper
This is the basic spice mix. Alter it according to your preferences. For instance, if you like it extra spicy, increase the crushed red pepper flakes, or omit altogether if you don’t like the heat.
For the Pimento Cheese Mixture:
- 8 tablespoons cream cheese
- 1-1/2 cups shredded cheddar cheese
- 1-1/2 cups shredded low moisture mozzarella cheese
- 1/2 cup shredded Parmesan cheese
- 1 (4-ounce) jar diced Pimentos/Pimientos
- 3 tablespoons sour cream
- 3 tablespoons mayonaise
If you really love that pimento flavor, you may want to double the amount to 8 ounces instead of 4 ounces.
Directions:
- In a small bowl, stir together the salt, onion powder, pepper, garlic powder, smoked paprika, celery salt, and crushed red peppers.
- Rub the spice mixture on each side of each chicken breast. Lay the chicken breasts in a 9 x 13 inch baking dish.
- In a medium sized bowl, stir together the cream cheese, cheddar, mozzarella, parmesan, pimentos, sour cream and mayonnaise.
- Top the chicken with the cream cheese mixture.
- Cover the dish with foil. Bake in a preheated oven at 350 degrees Fahrenheit for 35 minutes. Uncover and bake for an additional 15 minutes.
