Ingredients for the thinly sliced chicken breast recipe with mushroom gravy:
- A package of thinly sliced chicken breast pieces (About 5 to 6 pieces)
- 1-1/2 teaspoons salt
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon mustard powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon celery salt
- 1 tablespoon corn starch
- 2 tablespoons olive oil
- 1 cup chopped onion
- 3 tablespoons butter
- 16 ounces white button mushrooms, sliced or quartered
- 1 tablespoon garlic, minced or diced
- 3 tablespoons flour
- 1/2 cup dry sherry
- 1 cup chicken stock
- 1 cup heavy cream
- 2 tablespoons parmesan cheese
- 1 teaspoon dried dill
- 2 teaspoons dried parsley
- Chicken bullion cube
Directions:
- Rub the chicken pieces with: 1 teaspoon of the salt, 1 teaspoon onion powder, teaspoon garlic powder, teaspoon mustard powder, teaspoon smoked paprika, teaspoon pepper, celery salt, and corn starch.
- Heat the olive oil in a large deep dish pan or dutch oven. On medium heat, cook the chicken for about 3 minutes per side. Remove the chicken from the pan.
- In the same pan, lower the heat to a low-medium and add the onions. While stirring occasionally, cook the onions until they become soft. This will take about 6 minutes.
- Add the butter and mushrooms, along with 1/2 teaspoon of additional salt. Stirring occasionally, cook the mushrooms until the liquid starts to evaporate. This will take about 8 to 10 minutes, deadening on how much water is in the mushrooms. This will take on the longer side if the mushrooms were previously frozen.
- Add the garlic. Cook for about one additional minute.
- Stir in the flour. The flour will create a roux and thicken the sauce. Cook for about about two more minutes. You want to get the raw flour taste out.
- Add the sherry, chicken stock, heavy cream, parmesan cheese, dill, parsley, and chicken bouillon cube. Bring to a low simmer.
- Return the chicken to the dish. Simmer for about 15 more minutes.
