Fritos Taco Casserole
This Fritos Taco Casserole combines ground beef with onions, garlic, corn, black beans, melted cheeses, along with crunchy Fritos corn chips.
Meaty, cheesy, and a little crunchy. This is a satisfying and fun meal with a variety of flavors and textures.

Ingredients
- 1 tablespoon light olive oil
- 2 tablespoons butter
- 1 cup chopped yellow or white onions
- 1 teaspoon minced garlic
- 2 to 2-1/2 pounds ground beef (20% fat)
- 2 teaspoons salt
- 2 teaspoons onion powder
- 2 teaspoons chili powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 2 tablespoons flour
- 1/2 cup ketchup
- 1 (14 ounce) can diced tomatoes, drained of liquid
- 1 (14 ounce) can corn, drained of liquid
- 1 (14 ounce) can black beans, drained of liquid
- 6 cups of Fritos corn chips of your choice
- 4 cups melting shredded cheeses (Cheddar, Monterey Jack, Asadero, and Queso Quesadilla)
How to make the Fritos Taco Casserole
- Combine the olive oil and butter in a pot. Melt the butter on low-medium heat.
- Add the chopped onions and cook for 6 to 7 minutes, or until the onions begin to soften.
- Stir in the garlic and cook for 1 additional minute.
- Raise the heat to medium. Add the ground beef along with the salt, onion powder, chili powder, cayenne pepper, black pepper, and garlic powder. Cook about 7 minutes, or until the meat is no longer pink.
- Stir in the flour and cook for an additional minute. The flour will help to thicken the meat sauce and give it that taco meat like texture.
- Add the ketchup, canned tomatoes, canned corn, and canned black beans. Cook for 8 to 10 minutes, or until the meat sauce thickens and the flavors come together. At this point it should taste good as is, but we will make it even better.
- In a deep 9 x 13 inch baking dish. Arrange half of your Fritos corn chips. You can use any flavor. I used a combination of chili cheese and original.
- Spread half of the meat sauce over mixture over the chips, followed by half of the shredded cheeses.
- Add a second layer of Fritos corn chips over the cheese.
- Carefully spread the rest of the meat sauce over the chips, followed by the rest of the shredded cheeses.
- Cover the dish with nonstick foil. Bake in a preheated oven at 350 degrees Fahrenheit for 40 minutes.
- Uncover and continue to bake for about 10 additional minutes, or until the cheese is melted.
