Creamy Mushroom Chicken and Rice
This Creamy Mushroom Chicken and Rice is maximum comfort food. It has two kinds of rice (long grain white rice and wild rice), along with mushrooms, tender chicken, herbs, spices, sherry, cream, and parmesan cheese.
It’s the kind of one pot meal you’ll want to make over and over again. It’s so good, your family will ask for seconds.
Ingredients
- 2-1/2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon sweet paprika
- 2 tablespoons light olive oil
- 3 lb chicken pieces (with skin on)
- 4 tablespoons butter
- 8 ounces white button mushrooms, sliced
- 1 tablespoon chopped garlic
- 2-1/2 cups long grain white rice
- 1/2 cup long grain and wild rice mix with herbs
- 4 cups chicken stock or broth
- 1/4 cup dry sherry
- 3/4 cup heavy cream
- 2 chicken bullion cubes
- 1 teaspoon dried dill
- 1 teaspoon dried parsley
- 4 tablespoons grated parmesan cheese
Directions
- Stir 2 teaspoons of salt with the pepper, onion powder, garlic powder and paprika. Sprinkle on the chicken pieces. Do not remove the skin off the chicken pieces. The skin will add extra flavor to the other ingredients.
- Heat the oil on medium heat in a casserole dish or pot. Cook the chicken pieces for 3 to 4 minutes per side. Remove the chicken pieces from the dish. You’ll probably have to do this in batches. Do not remove those delicious brown bits that the chicken left in the pan.
- Lower the heat to low. Add the butter and onions. Sprinkle 1/2 teaspoon of salt over the onions. Cook for 5 minutes, or until the onions begin to soften.
- Add the mushrooms and cook for 5 minutes.
Mix the garlic with mushroom. Cook for about 5 more minutes, or until the mushroom shrink down in size.
- Stir in the rice and the wild rice mix along with the herb packet and allow to toast the rice for 2 minutes.
- Pour in the sherry, chicken stock, and cream, also with the chicken bullion cube, dill, and parsley.
- Place the chicken pieces on top of the rice.
- Bake in a preheated oven at 350 degrees Fahrenheit for about 55 minutes to 1 hour.
- Stir in the grated parmesan cheese.
