Strapatsada (Greek Scrambled Tomato Eggs)
Strapatsada, the famous Greek scrambled tomato eggs can be made with 3 basic ingredients: olive oil, tomatoes, and eggs. Most often, the dish includes Feta cheese and onions and/or garlic.
Most Greek families have a variation of this dish. My uncle used to make this dish when he wanted a hearty breakfast, or sometimes even later in the day.
It’s amazing how such few ingredients can produce such a flavorful and delicious meal.

Ingredients for One Serving of Strapatsada
Multiply these ingredients by the number of people you are serving.
- 1 tablespoon light olive oil
- 1 tablespoon minced onion
- 1/2 teaspoon minced garlic
- 6 Vine Ripe Campari Tomatoes
- pinch of salt
- pinch of black pepper
- 3 large eggs
- 1 to 2 ounces Feta cheese
Since this dish has only a few ingredients, it’s important that you get the freshest tomatoes you can find. These Vine Ripened Campari Tomatoes taste as good as they look and smell.
Directions
- Heat olive oil in a pan on low-medium heat. Cook the minced onion for about 4 minutes, or until tender.
- Add the garlic. Cook for an additional 1 to 2 minutes.
- Cook the tomatoes for 10 minutes, or until the liquid evaporates.
- In a small bowl, beat 3 large eggs. Stir the eggs into the tomato sauce. Cook for about 3 to 4 minutes, or until your preferred level of doneness.
- Stir in a generous amount of Feta cheese.
