Shakshuka
I first came across a recipe for Shakshuka about some years back, when I saw it in an Israeli cookbook. As you probably know by now, I collect cook book from all over the world. So, when I came back from a trip to Israel, I had to have several cookbooks.
The thing that I loved most about Israeli cooking is that it’s influenced by cuisines from all over the world.
I had never heard of it before, but was very intrigued, since I absolutely love breakfasty type dishes. Since then, it has become a more popular dish thanks to food bloggers across the world.
What is Shakshuka?
Shakshuka is basically a spiced tomato sauce with eggs baked in it. Italians have an almost identical dish called Eggs in Purgatory. Different cooks have a slightly different spin on exactly what to put in it, as well as what country it originally originated in.
Shakshuka is a simple dish, but a delicious one. What makes it special is the combination of spices and flavors. The tomato sauce is anything but boring. Each layer of flavor has the time to develop. Your taste buds will do a happy dance.
You want your eggs nestled in the tomato sauce.
Crumble a generous portion of Feta Cheese over the dish.
At this point, you can add a little extra salt and pepper on the eggs. In my family of origin, everyone loved their dishes extra salty. I had also developed that taste for salt. It was after I started cooking for other people that I realized that most people don’t like their food as salty, so I started scaling it back.
Being of partly Greek origin, I love my Feta Cheese and like to be extra generous when I crumble it on top of the eggs and tomato sauce. You can also sprinkle on some extra parsley. This add a pretty color to the dish.
Pop your pan in the oven.
Bake in a preheated oven for about 13 to 14 minutes. I like my egg whites to be fully cooked and the yolks to be just a little jiggly. You would speed up the process by covering the dish. Just keep a careful watch over your dish.

Shakshuka
Ingredients
- 4 Teaspoons Olive Oil
- 1 Cup Chopped Yellow Onion
- 1/2 Cup Chopped Red Bell Pepper
- 1 Teaspoon Finely Diced Garlic
- 4 Cups Fresh Tomatoes or 3 (14 Ounce) Cans Diced Tomatoes (Make sure there is no sugar added)
- 3 Tablespoon Chopped Parsley, plus a little more to garnish
- 1 Teaspoon Salt
- 1/8 Teaspoon Pepper
- 1/4 Teaspoon Paprika
- 1/4 Teaspoon Cayenne Pepper
- 1/4 Teaspoon Chilli Pepper
- 8 to 10 Eggs
- 2 to 3 Ounces Feta Cheese
Instructions

Preheat oven to 350 degrees Fahrenheit.

Heat about 4 teaspoons of oil in a large pan on low-medium.

Add the onions and red bell peppers. Cook until the onions and pepper begin to soften.

Add a teaspoon of garlic. Cook for an additional minute or two. You want to cook out that raw, garlic taste.

Stir in the diced tomatoes. Then, stir in the parsley, salt, pepper, paprika, cayenne pepper, and chili pepper.

Cook until the tomatoes cook down and the sauce thickens.

Remove from heat. Make little indentations in the tomato sauce and add an egg in each one. If you like, you can add a little extra salt and pepper.

Crumble a generous portion of Feta Cheese over the dish.
